Dry roast peanuts on medium heat until crisp.
Cool and grind coarsely (not too fine). Heat oil in a pan. Add curry leaves and green chillies. Sauté for a few seconds. Add the ground peanut powder and mix. Add the soaked and drained sabudana. Mix gently. Add salt and stir well. Cover and cook on low heat (steam) for 3–5 minutes.
Stir occasionally to prevent sticking. Once sabudana turns soft and slightly transparent, turn off heat. Garnish with fresh coriander and serve hot.
