Blend in mixer all sauce ingredients,

Chop sweetcorn
Step 3

Add rice to cast iron pot, add vegetables, put fish on top and than add the sauce. Put it on a low heat for 15 min or until fish and veg are ready.

Add chopped coriander to taste and maybe some more sweet chilli sauce
