Ingredients
4 servings
2 cupsjasmine rice
1tin coconut milk
2pandan leaves
knotted
salt
castor sugar
2 slicesdried galangal
Optional
lemongrass

Instructions
Step 1
Wash your rice thoroughly at least 3 times. It is important to remove as much starch from the rice as possible.
Step 2
Add the coconut milk, knotted pandan leaves, topping up with enough water to cook. If you are using the optional galangal and lemongrass, add these too.
Step 3
Sprinkle in a pinch of salt and castor sugar, then give everything a good stir.
Step 4
Cook the rice as you would normally.
Step 5
Once cooked, leave the rice covered for at least 30 minutes before serving.
Step 6
