Instructions
Step 1
Method 1 Roast the squash & courgette at 180°C with olive oil, salt, pepper & herbs for 25-30 mins until tender.
Step 2
2 Pan-fry the salmon with salt, pepper & lemon juice. Once cooked, flake into bite-sized pieces.

3 Cook the lentils or grains according to the package & let cool.
Step 4
4 Chop & wash the kale, removing any tough stems.
Step 5
5 Combine all ingredients in a large bowl: grains, kale, roasted veg, salmon, feta, and pumpkin seeds.
Step 6
6 Dress with olive oil, lemon juice, salt & pepper. Toss and enjoy!
