Instructions
Step 1
Heat the garlic-infused olive oil (or regular, can add garlic instead) in a pot over medium heat.
Step 2
Add carrots, courgette, and potato (and onion if adding it). Cook about 5 minutes until slightly softened. For gut friendly don't add onion.
Step 3
Stir in cumin and paprika and cook for 30 seconds to release flavour.
Step 4
Add the rinsed red lentils and stock.
Step 5
Pour in the chick or veg stock stock (about 4 cups) I used some roast chicken juices alongside regular stock, adjust ratio.
Step 6
Bring to a boil, then reduce to a simmer for 15–20 minutes until lentils are very soft.
Step 7
Blend partially with a stick blender if you like a smoother soup.
Step 8
Stir in lemon juice and optional spinach at the end.
