Crockpot Tuscan chicken

Instructions

Step 1
1. In a small bowl, mix oregano, thyme, garlic powder, onion powder, red pepper flakes, salt, and pepper. Rub evenly over chicken breasts.

2. Heat olive oil in a skillet over medium-high heat and brown chicken 3-4 minutes per side

3. Transfer chicken to the slow cooker.
Step 4
4. Add sliced onion, minced garlic, sun-dried tomatoes, and chicken broth over the chicken
Step 5
5. Cover and cook on LOW for 3-4 hours, until chicken is tender.
Step 6
6. Remove chicken temporarily. Stir in heavy cream and spinach, allowing spinach to wilt.
Step 7
7. Return chicken to the slow cooker and spoon sauce over the top.
Step 8
8. Sprinkle with Parmesan, cover, cook 15 more minutes.
Step 9
9. Garnish with fresh parsley and serve over pasta, rice, or with crusty bread.
