Marmalade granola

Regular readers of my recipes will know that l am a fan of a granda, having made a fair few over the years. Peanut butter granola for the Guardian, apple crumble granola on my online blog, and various others in my kitchen, all bottled up in large jars for when the need for a good munch and crunch strikes. I feel a little like a cereal-based Robin Hood, swiping the fancy ideas from their recycled boxes in the health-food aisles and recreating them in a sticky, naughty, straightforward and inexpensive way for the masses. And they don't get much simpler than this one. Sometimes when I'm feeling particularly irreverent I add a handful of plain chocolate, chipped into pieces, too. It's like legitimate Jaffa Cakes for breakfast.

Instructions

Step 1
1 Preheat the oven to 180°C/350°F/gas 4. Lightly grease a baking tray.
Step 2
Melt the butter or oil, marmalade and honey or syrup together in a large pan over low heat, or in a microwave-safe bowl in the microwave on medium power for 1 minute. Stir well to combine.
Step 3
2 When it has all melted together, tip in the oats. Stir well - hence using a large pan - making sure they are evenly coated. Some of the oats will start to clump together at this stage - this is brilliant, don't try to break them up too much!
Step 4
3 Tip the mixture onto the baking tray, spreading it out to help it cook eventy,.
Step 5
Place the tray carefully in the centre of the oven and bake for 20 minutes.
Step 6
Reduce the heat to 160°C/325°F/gas 3 and cook for a further 10 minutes.
Step 7
Then remove from the oven and allow to cool completely - around 30 minutes to 1 hour.
Step 8
4 Transfer the granola to a clean large jar or container, where it will kep for around 3 months at room temperature.
