Instructions

Step 1
Brown the meat. In a large Dutch oven brown sausage on medium- high heat. Remove with slotted spoon. Then brown chicken in oil. Set aside all meat.
Step 2
Make the roux. Add remaining oil and flour, stirring constantly over medium-low heat for 15-20 minutes until it reaches a dark chocolate or penny color.
Step 3
Saute the trinity. Stir in onion, bell pepper, and celery. Cook for 5 minutes until softened. Add the garlic cook for 1 minute until fragrant.
Step 4
Simmer with herbs. Gradually whisk in chicken broth to prevent lumps. Add the bay leaves and thyme and other seasonings. Bring to a boil.and reduce to simmer.
Step 5
Add okra and meat. Simmer uncovered for 45-60 minutes.
Step 6
Add shrimp cook for 3 minutes until pink. Then remove bay leaves. Add salt and pepper to taste. Serve on rice.
