Ingredients
2 servings
200gsmoked mackerel
skin removed
200glow-fat cottage cheese
1zest of lemon
1 Tbsplemon juice
to taste
2spring onions
finely sliced
1 tspwholegrain mustard
1 Tbspfresh dill
chopped, plus a few torn fronds for salad
2 Tbspfresh parsley
chopped
black pepper
60gslice bread
per person
0.5cucumber
thinly sliced
1apple
crisp, mandolined into thin slices, or thinly sliced with a knife
1 Tbspwhite wine vinegar
or apple cider vinegar
Salt
for salad, to taste
Instructions
Step 1
In a bowl, flake the smoked mackerel into chunky pieces. Add the cottage cheese, lemon zest, lemon juice, spring onion, mustard, dill and parsley. Mix (keep some texture), then add plenty of black pepper. Taste and adjust with a little more lemon if you want it brighter. It shouldn’t need salt, as mackerel is salty.
Step 2
In a separate bowl, toss the cucumber and apple with the dill and vinegar. Season with salt and pepper, then leave for a couple of minutes to lightly pickle and soften.
Step 3
Toast your bread until crisp and golden.
Step 4
Divide the mackerel mixture between the toast, then pile the cucumber and apple salad on top.
