Beef Stir-Fry with Noodles

Instructions

Step 1
Peel and finely chop the carrot, leek, garlic, and ginger.
Step 2
Bring a pot of water to a boil and season lightly with salt, cook the noodles for 4–5 minutes until tender, then drain and toss with a little oil so they do not stick together.
Step 3
Slice the beef thinly, mix it with cornstarch, and season with salt and pepper, then in a separate bowl mix together soy sauce, 1 tsp sugar, sesame oil, sweet chili sauce, and oyster sauce.
Step 4
Heat a little oil in a pan and add the carrot, ginger, garlic, and leek, then stir-fry over high heat for a few minutes until the carrot softens, season with salt, and remove the vegetables from the pan.
Step 5
Heat the pan again with a little oil and once hot add the sliced beef, cook over high heat (it does not need to be fully cooked yet), then add the previously cooked vegetables and prepared sauce, cook for a few minutes until the sauce thickens, and finally mix in the noodles.
Step 6
When serving, you may optionally garnish the noodles with fresh coriander leaves.
