Instructions

Step 1
Preheat oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish with olive oil.
Step 2
Trim, deseed, and dice one bell pepper. Slice remaining peppers in half lengthwise, keeping stems intact if possible. Remove seeds and ribs.
Step 3
Heat olive oil in a large skillet over medium heat. Add onion and cook for about 4 minutes until softened.
Step 4
Stir in rice and salt and cook for 3 minutes.
Step 5
Add vegetable broth, diced tomatoes, chopped bell pepper, green onions, and taco seasoning. Bring to a boil, then reduce heat, cover, and simmer for about 25 minutes until rice is tender.
Step 6
Stir in black beans and corn until heated through.
Step 7
Fill each pepper half with the rice mixture and place in the baking dish. Top with shredded cheese.
Step 8
Bake uncovered for about 40 minutes, until peppers are tender and cheese is melted and golden.
Step 9
Serve warm and enjoy!
