550gground beef
1onion
small, diced
3cloves garlic

2 Tbsptomato paste
1 x 400gcan diced tomatoes with juice
1 ½ cupsbeef broth
250gpasta
penne or similar
1 tspItalian seasoning
or oregano + basil
½ tspsmoked paprika
salt
to taste
black pepper
to taste
1 tspworcestershire sauce
1 tspbalsamic vinegar
or any vinegar
1 cupshredded mozzarella cheese
½ cupcheddar
shredded, or grated parmesan
1 Tbspbutter
Fresh parsley
or basil, optional
Instructions
Step 1
Heat a large skillet over medium-high heat. Add ground beef and cook until well browned, breaking it up but not stirring constantly. Remove beef and set aside.
Step 2
Reduce heat to medium. Add onion and cook 5–7 minutes until soft and slightly caramelized.
Step 3
Add garlic and cook 30 seconds.
Step 4
Stir in tomato paste and cook 1–2 minutes. Add spices enough to let bloom.
Step 5
Add diced tomatoes, beef broth, Worcestershire sauce, vinegar, Italian seasoning, smoked paprika, salt, and pepper. Stir well.
Step 6
Add uncooked pasta. Bring to a simmer, cover, and cook 10–12 minutes, stirring occasionally, until pasta is tender.
Step 7
Return beef to the pan and mix.
Step 8
Reduce heat to low. Stir in butter until melted.
Step 9
Add cheeses and stir until melted and creamy.
Step 10
Taste, adjust seasoning, and garnish if desired.
