Instructions

Step 1
Trim excess fat from the beef and place it into the slow cooker.
Step 2
In a bowl, add honey, light soy sauce, mirin, miso, ginger and garlic. Mix well to combine. Add to the slow cooker, ensuring beef is completely covered.
Step 3
Cook on LOW for 8-9 hours or HIGH for 4-5 hours, until the beef is tender and easily pulls apart with a fork.
Step 4
In the last 30 minutes before serving, in a small bowl, mix cornflour with 3 tablespoons cold water to create a smooth slurry. Stir the slurry into the slow cooker and cook on HIGH for the final 30 minutes, allowing the sauce to thicken. Shred the beef and stir through the thickened sauce before serving.
