Instructions
Step 1
Mix the ground flaxseed with the water (which should be enough to cover) and set aside while it thickens.
Step 2
Heat oil in a pan over medium heat, adding in the mushrooms, leek, and garlic. Sauté until the veggies start to soften and turn translucent.
Step 3
In a food processor, pulse the chickpeas until broken down then set aside.
Step 4
In a large bowl, combine the cooked mushrooms and leek, chickpeas, basil, and flaxseed mixture. Add in the seasoning. If still a bit loose, return to the food processor and pulse a few times until the mixture is more homogenous.
Step 5
Shape the mixture into patties. Refrigerate for about an hour for them to firm up.
Step 6
Heat oil in a pan over medium-high heat and add the patties. Cook on both sides until nicely browned.
Step 7
Serve however you like burgers and enjoy!
