Instructions

Step 1
Whisk the eggs and season.
Step 2
Heat oil in a pan over medium heat. Add in eggs and scramble.

In a bowl, using a fork mash the avocado with the lime juice. Fold in onion and tomatoes, then season.

Spread peanut butter on the toast slices.
Step 5
Add avocado mixture over the toast.
Step 6
Top with scrambled eggs.
Step 7
Serve with seasoning and chilli flakes, if desired. Top with sprouts.
