Instructions
Step 1
Preheat oven to 350 F, spray muffin cups with nonstick cooking spray.
Step 2
In a skillet over medium-high heat, crumble and cook sausage until 3/4 brown, then add onion and reduce heat to medium-low. Stir and continue cooking until the sausage is cooked through and the onion is soft. Remove from heat and set aside.
Step 3
Crack the eggs into a bowl and add the salt, pepper and chili powder. Wisk until combined. Add cheddar and bell pepper, stir to combine. Once the sausage is cooled, add to mixture and stir until combined.
Step 4
Add the mixture to the muffin cups, then bake for 20-22 minutes until they are just puffy and barely set. Serve warm or freeze and thaw in the mircowave.
