1. Preheat oven to 160°C fan.

2. If using dates, soak them in hot water for 10 minutes, then drain and chop.

3. Mash the bananas in a bowl.

4. Add the egg, melted butter, milk, lemon juice or vinegar, and mix well.

5. Stir in the chopped dates/raisins and oats.

6. In another bowl, mix buckwheat flour, baking powder, salt, and cinnamon.

7. Add dry ingredients into wet ingredients and stir gently until combined.

8. Let the batter rest for 5 minutes.

9. Spoon into muffin cases or a greased muffin tray.

10. Bake for 25 minutes until the tops are firm and a toothpick comes out mostly clean.

11. Let cool for 10 minutes before eating.

Makes about 10–12 muffins.
