Instructions

Step 1
Rinse lentils well and drain. Place a pot on the stove and add 3 to 4 inches of water, bring to the boil and then reduce to simmer for 15 to 20 mins until al dente. Over cooking the lentils is the death of this dish, be carefull!
Step 2
While the lentils are simmering, make the dressing by placing all ingrediants in a jar with a tight lid and shake vigorously to combine
Step 3
Finely dice the onion - the salad is best if all the ingrediants are roughly the same size. Also chop the sultanas
Step 4
When the lentils are cooked, remove from heat, drain and place under running cold watert to stop the cooking process
Step 5
Once cooled but still a little warm place the lentils in a large bowl and toss with the dressing. Add the onion, sultannas and capers and mix well.
Step 6
Add the chopped parsely prior to serving (otherwise the salad can hang in the fridge for a while to marrinate)
