Spicy Ground Beef & Sweet Potato Bowl

Ingredients

For Mushroom & Onion Mix
For the Ground Beef
1 lbground beef
1.5 TbspGarlic
Minced
2 tsponion powder
10Thai Chili Peppers
Diced
1 tspPimenton de la Vera Picante
1 tspPimenton de la Vera Dulce
1 Tbspdry oregano
1 tspcumin
1 Tbspevoo
salt
to taste
pepper
to taste
Instructions
Step 1
Fill an 8 qt pot with water over high heat to boil. Spread EVOO on the inside rim of the pot to avoid spillover
Step 2
Cube the Sweet Potato into small cubes and place in the boiling water for 12 minutes until soft. Rest a wooden spoon over the pot to avoid the boiling water from spilling over
For the Mushroom & Onion Mix
Step 3
Add the 7 or 8 Large sliced mushroom to a large dry saute pan and cook over medium heat until all the water drains from the pan
Step 4
Add 1 Tbsp of EVOO to the pan over
Step 5
Add the large diced onion to the pan and cook until translucent
For the Ground Beef
Step 6
Add the 1 lb of ground beef to the same saute pan as the mushroom & onion mix and break up the ground beef into tiny pieces. (Add more EVOO if needed)
Step 7
Add the minced garlic, onion powder, Pimenton de la Vera Picante & Dulce, Orégano, Cumin, and diced Thai Chili peppers to the ground beef, mushroom, and onion mixture.

Salt & Pepper to Taste
Putting it All Together
Step 9
Drain the boiling water from the pot with the sweet potatoes
Step 10
Add the Ground Beef and Mushroom & Onion Mixture to the pot and Stir it all together
Step 11
Seperate Mixture into 4 seperate silicone freezer containers and store in the fridge or freezer
