Oven Baked Chicken and Yellow Rice

Ingredients

6chicken thighs
bone-in, skin-on, or boneless if preferred
2 Tbspolive oil
1 tsppaprika
1 tspgarlic powder
½ tsponion powder
½ tspground cumin
salt
to taste
black pepper
to taste
2 cupslong-grain rice
rinsed
3 ½ cupschicken broth
1onion
small, diced
1 cupcarrots
diced
½ cupbell peppers
diced
2cloves garlic
minced
½ tspturmeric
for color
½ tsppaprika
salt
to taste
black pepper
to taste
fresh parsley
chopped
Instructions
Step 1
Preheat oven to 375°F and lightly grease a large baking dish.
Step 2
Season chicken thighs with olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper. Set aside.
Step 3
Spread rice evenly in the baking dish and stir in onion, carrots, bell peppers, garlic, turmeric, paprika, salt, and pepper.
Step 4
Pour chicken broth over the rice and stir gently to combine.
Step 5
Nestle the seasoned chicken thighs on top of the rice, skin-side up.
Step 6
Cover tightly with foil and bake until the rice is tender and the chicken is cooked through.
Step 7
Remove foil and continue baking until the chicken skin is golden and lightly crisp.
Step 8
Garnish with fresh parsley before serving.
