Instructions

Step 1
Preheat oven to 375°F. Bring a large pot of salted water to a boil. Cook pasta 1–2 minutes shy of package directions (it will finish in the oven). Drain and set aside. Lightly grease your 12x9 baking dish with a little olive oil or butter.
Step 2
In a large skillet over medium heat, cook sausage and crumble, set aside. If not enough drippings are left, add olive oil/butter. Add diced onion and cook 4–5 minutes until softened . Stir in garlic and Italian seasoning for 1 minute until fragrant. Add back the cooked sausage.
Step 3
In a large bowl (or the empty pasta pot), toss the drained pasta with your sauce, most of the pepperoni (reserve some slices for the top), and 2½ cups of the mozzarella. Season with salt and pepper to taste. Mix gently so the pepperoni and sauce coat everything.
Step 4
Spread the mixture evenly into the prepared dish. Scatter the remaining pepperoni slices over the top. Sprinkle evenly with the remaining mozzarella and all the Parmesan.
Step 5
Cover loosely with foil and bake 25 minutes. Uncover and bake another 5 minutes until the cheese is bubbly and golden brown on top. Let rest 5 minutes before serving.
