Instructions
Step 1
heat olive oil in a large pan and add onions, once translucent add garlic and cook for 1-2 minutes. At the same time place the chicken kievs in a large casserole dish and cook at 180 for 20-25 minutes (check to make sure they don't leak)

add diced courgettes and then aubergine on top, stir regularly for 10 minutes
Step 3
once the aubergine has shrunk and browned a little add half a cup of red wine and stir until the red wine has evaporated or absorbed into the courgettes and aubergine
Step 4
Turn off the chicken kievs, but leave them in the oven.
Step 5
at this point turn off the chicken kievs
Step 6
wash 2 cups of jasmine rice in water and then add 3 cups of boiling water. Put them in the a covered dish in the microwave for 8 minutes.
Step 7
add bottle of pasta sauce and can of tomatoes, stir and leave on low heat for ten minutes
Step 8
take the rice out of the microwave, open the lid (be careful of steam), add half a cup of boiling water and fluff the rice with a fork. Once you have fluffed the rice, put the rice back in the microwave for another 2-3 minutes. When you take it out, leave it to stand until the rest of the meal is ready.
Step 9
take the chicken kievs out of the oven and put them on the bench. Pour the sauce over the top and then cover the top in melted cheese. Put them back in the oven at 180 degrees for 10-15 minutes.
