Sweet Potato Shepherd's Pie

Instructions

Step 1
Preheat oven to 400. Boil a large pot of water, meanwhile, peel and chop sweet potatoes. Cook potatoes for 10 minutes or until easily pierced with a fork.
Step 2
Meanwhile, begin browning Impossible Beef. Optionally, add in a quarter cup of water while chopping beef to help create smaller pieces. Add onion and cook until translucent.
Step 3
Drain and mash potatoes until smooth. Optionally, you may add 2-3 tbsp of butter or oil to smooth and improve flavor. Set aside.
Step 4
Add tomato paste to beef mixture and stir. Add in rosemary and thyme and garlic, cooking spices to bloom, 2 or 3 minutes, being careful not to burn.
Step 5
Add in beans and their liquid. Stir in mushrooms and mixed vegetables. Add in Guinness and simmer, letting liquid reduce, about 10 minutes. Add in more Guinness as desired for thickness and also flavor.
Step 6
Mix 2 tbsp cold water with 2 tbsp cornstarch and mix thoroughly (I suggest using a small jar and shaking). Stir in, along with Worcestershire sauce, salt and pepper, tasting to add pepper and more salt as desired. Simmer for 5 minutes, allowing sauce to thicken.
Step 7
Pour mixture into a 9x13 baking dish and top with potatoes. Transfer to oven and cook for 20-30 minutes, until it begins to bubble.
Step 8
As an optional step, you may broil for a few minutes to brown the tops of the potatoes. Key a very close eye on the dish, pulling out when poratoes are browned to your liking. Allow to cool for 5-10 minutes before serving.
