Kerala Nadan Chicken Curry
A simple Nadan-style chicken curry with marinated thigh pieces, whole spices roasted in coconut oil, then simmered with onion, tomato, and coconut water until creamy.

Instructions
Step 1
Marinate chicken thigh (skinless) with chilli powder, garam masala, turmeric, pepper, and salt.
Step 2
Roast in coconut oil: mustard seeds, curry leaves, cloves, cinnamon, whole peppercorn, and red chilli flakes.
Step 3
Take out cloves and cinnamon after frying.
Step 4
Add onion, garlic + ginger, and chilli; cook.
Step 5
Add tomato.
Step 6
Put chicken pieces and sauté for 5 minutes.
Step 7
Mix garam masala in a few teaspoons of water; add and sauté.
Step 8
Pour water, cover, and cook for 15 minutes.
Step 9
Add coconut water and cook until creamy.
Step 10
Adjust salt or pepper to taste.
