Instructions
Step 1
Heat the oil in a large pan and sauté the diced onion until soft.
Step 2
Add the curry paste/powder and cook for 1 minute.
Step 3
Sir in the diced sweet potatoes, chickpeas, chopped tomatoes, and coconut milk.
Step 4
Bring to a simmer, cover, and cook for 20-25 minutes until the sweet potatoes are tender.
Step 5
Stir in the fresh spinach until wilted, then remove from heat, cool completely, and freeze.
