Apple & Brown Sugar Pork Tagine

Instructions

Step 1
Pour the olive oil into the base of a cold tagine and layer the chopped onions evenly across the bottom.
Step 2
Arrange the diced pork shoulder directly on top of the onion base.
Step 3
Season the pork evenly with the cinnamon, allspice, and salt, then layer the apple slices and drained chickpeas around the meat.
Step 4
Stir the brown sugar into the chicken stock until dissolved and pour over the ingredients.
Step 5
Cover with the tagine lid, place it into a cold oven on the lowest rack, and set the temperature to 165°C.
Step 6
Bake for 2 hours until the pork is fully cooked and tender.
