Instructions

Step 1
Preheat the oven to 425F.
Step 2
Toss 2 diced sweet potatoes with 1 Tbsp olive oil, 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp kosher salt, and 1/4 tsp black pepper. Spread onto a baking sheet and roast for 25–30 minutes, stirring halfway through.
Step 3
Meanwhile, rinse 1 cup quinoa well. Combine with 2 cups vegetable broth in a saucepan. Bring to a boil, reduce to low, cover, and simmer for 15 minutes. Remove from the heat and let stand for 5 minutes, then fluff with a fork.
Step 4
While the quinoa cooks, whisk together 3 Tbsp olive oil, 2 Tbsp apple cider vinegar, 1 Tbsp Dijon mustard, 1 Tbsp maple syrup, 1 minced garlic clove, 1/2 tsp kosher salt, and 1/4 tsp black pepper until smooth.
Step 5
Pat 1 can chickpeas dry with paper towels. If desired, warm them in a skillet over medium heat for 3–4 minutes with a pinch of smoked paprika and garlic powder.
Step 6
Divide 5 oz spring mix among serving bowls or meal prep containers. Top with the cooked quinoa, roasted sweet potatoes, chickpeas, 1 cup shredded red cabbage, 1 cup shredded carrots, 1 diced apple, 1/2 cup dried cranberries, and 1/2 cup chopped pecans.
Step 7
Sprinkle with 1/4 cup crumbled feta, if using. Drizzle with the maple Dijon dressing just before serving or pack it separately for meal prep.

Prep Ahead Roast the sweet potatoes up to 4 days ahead. Cook the quinoa and refrigerate. Prepare the dressing up to 1 week in advance. Chop the cabbage and shred the carrots ahead of time. Dice the apple just before serving to keep it fresh.

Freezer Instructions Freeze Before Cookin Freeze the diced sweet potatoes in a freezer-safe bag for up to 3 months. Freeze After Cooking The roasted sweet potatoes and quinoa freeze well for up to 3 months. The fresh vegetables, apples, dressing, and feta should be prepared fresh.

Keep the dressing separate until serving for the freshest meal prep. This bowl is delicious served warm, chilled, or at room temperature. Add grilled chicken for extra protein, or enjoy it as a hearty vegetarian meal. This is a great "clean out the produce drawer" recipe—swap in whatever crunchy vegetables you have on hand.
