A quick, fuss-free veggie teriyaki bowl with an umami sweet chilli sauce. Stir-fry vegetables, simmer in sauce, and serve over steamed rice or springy noodles.

Ingredients
2 servings
1 Tbspoil
1onion
roughly diced
1 tspgarlic
grated
2 tspfresh ginger
grated
1red bell pepper
roughly diced
1courgette
zucchini, cut into bite-sized pieces
60gbroccoli
long-stem, cut into small florets
6baby corn cobs
1aubergine
medium, eggplant, cut into bite-sized pieces
125mllight soy sauce
3 Tbspbrown sugar
2 tspdried chilli flakes
1 Tbsphoney
vegan option: use agave or maple syrup
Instructions
Step 1
Combine all of the sauce ingredients in a bowl, mix well and set to one side.
Step 2
Heat the oil in a wok over a medium-high heat, add the onion, garlic and ginger and fry until fragrant and the onion is translucent. Add the remaining vegetables and stir-fry for 3–4 minutes. Add the sauce mixture, bring to the boil and simmer for 3 minutes.
Step 3
Serve on top of freshly steamed rice or springy noodles.
