Ingredients

700gsweet potatoes
large, peeled and cut into 2cm cubes
2 Tbspolive oil
1 tspsmoked paprika
1 tspground cumin
½ tspgarlic powder
½ tsponion powder
½ tspchilli powder
½ tspdried oregano
½ tspsea salt
¼ tspblack pepper

500glean beef mince
10-15% fat
1 Tbspolive oil
1onion
small, finely diced
3garlic cloves

1 Tbsptomato paste
1 tspchili powder
1 tspground cumin
1 tsppaprika
1 tsporegano
½ tspcoriander
½ tsponion powder
1 Tbspworcestershire sauce
100mlbeef stock
salt
black pepper
2avocados
ripe, diced
150gqueso fresco
crumbled, or feta
fresh coriander leaves
lime wedges
100gsour cream
or greek yoghurt
0.5lime juice
1 tsplime zest
1garlic clove
small, grated

Instructions
Roast the Sweet Potatoes
Step 1
Preheat the oven to 220°C (200°C fan).
Toss the sweet potato cubes with the olive oil and all the spices until evenly coated.
Spread them in a single layer on a baking tray.
Roast for 30–35 minutes, turning halfway through, until they are caramelised, crisp around the edges, and soft in the centre.
Step 2
Heat the olive oil in a large frying pan over medium-high heat.
Cook the onion for 5 minutes until softened.
Add the garlic and cook for another minute.
Add the beef and break it into small crumbles.
Cook until deeply browned.
Stir in:
tomato paste
smoked paprika
cumin
chilli powder
oregano
coriander
onion powder
Cook for 2 minutes to toast the spices.
Add the Worcestershire sauce and beef stock.
Simmer for 5–8 minutes, until the liquid has reduced and the beef is juicy but not watery.
Season with salt and pepper.
Step 3
Dice the avocado just before serving and season lightly with a squeeze of lime juice and a pinch of salt.
Crumble the queso fresco or feta.
Mix the lime crema if using.
Step 4
In each bowl, arrange:
A generous scoop of roasted sweet potatoes
A large portion of taco beef
Diced avocado
Crumbled queso fresco or feta
Fresh coriander
Finish with:
A drizzle of lime crema
Fresh lime juice
A few cracks of black pepper
Step 5
For an even heartier bowl, add:
Cilantro-lime rice
Black beans
Charred sweetcorn
Pickled red onions
Sliced jalapeños
Cherry tomatoes
Shredded lettuce
Step 6
Roast the sweet potatoes until they develop dark, caramelised edges—that's where their natural sweetness shines.
Let the beef brown properly before adding the spices to build a deeper, richer flavour.
Fresh lime juice at the end brightens the whole dish.
Queso fresco gives a mild, creamy finish, while feta adds a tangier bite—both work beautifully.
Step 7
Serve with:
Fresh guacamole and tortilla chips
Mexican street corn (elote)
A crisp cabbage slaw
Watermelon and cucumber salad
Sparkling lime water or homemade lemonade
This bowl is a wonderful balance of flavours and textures: smoky, savoury beef, sweet roasted potatoes, creamy avocado, tangy cheese, and fresh herbs. It's satisfying enough for dinner but fresh enough to enjoy any time of year.
