This is one of those meals that looks like you did A LOT when really the Instant Pot did most of the work lol. It’s loaded with chicken, sausage, pork, super flavorful, and makes a huge pot. Also the leftovers are somehow even better.

2 TbspOlive oil
1 lbchicken thighs
cut into bite-sized pieces
1 lbsmoked sausage
sliced
1 lbpork tenderloin
or pork shoulder, cut into bite-sized pieces
1onion
medium, diced
1green bell pepper
diced
1red bell pepper
diced
2celery stalks
diced
3 clovesgarlic
minced
1 ½ cupslong-grain white rice
2 ½ cupschicken broth
1 x 14.5 ozcan diced tomatoes
2 tspCajun seasoning
1 tspsmoked paprika
½ tspdried thyme
½ tspblack pepper
½ tspSalt
2bay leaves

Instructions
Step 1
Turn the Instant Pot to Sauté and add the olive oil.
Step 2
Add the chicken and pork and let them brown for about 3–4 minutes. They do not need to be completely cooked yet!! We’re just getting some color on them. Take them out and set them aside.
Step 3
Throw the sliced sausage in and let it brown for another 2 minutes, then take that out too.
Step 4
Now add the onion, green pepper, red pepper and celery. Cook for about 3–4 minutes until everything starts to soften.
Step 5
Add the garlic, Cajun seasoning, smoked paprika, thyme, salt and pepper and stir for about 30 seconds. Your kitchen should already smell ridiculously good at this point lol.
Step 6
Pour in about 1/2 cup of the chicken broth and SCRAPE THE BOTTOM of the pot really well. Do not skip this because the Instant Pot loves to yell burn at you over absolutely nothing.
Step 7
Add your chicken, pork and sausage back in.
Step 8
Add the rice, diced tomatoes, the rest of the chicken broth and bay leaves.
Step 9
Don’t go crazy stirring everything once the rice is in. Just gently make sure the rice is mostly covered with liquid.
Step 10
Put the lid on, seal it and cook on HIGH PRESSURE for 8 minutes.
Step 11
When it’s done, let it naturally release for 10 minutes, then carefully quick release whatever pressure is left.
Step 12
Take out the bay leaves and fluff everything together.
Step 13
Taste it and add more Cajun seasoning or salt if it needs it. Then throw some chopped green onions and parsley over the top.
