Chicken cutlets the Italians would rave about 🐥

Okay.. Idk if the Italians would rave but I definitely do😂 could eat a million different ways.. crispy on the outside, juicy on the inside, and seasoned enough that they’re actually good on their own. I love them for sandwiches, with pasta, on a salad, or literally just standing in the kitchen eating one straight off the plate lol.

Instructions

Step 1
1. Slice the chicken breasts in half lengthwise so you have 4 thinner cutlets. Pound them out until they’re nice and thin and pretty even.
Step 2
2. Season both sides of the chicken with salt, pepper, garlic powder, onion powder, paprika, and a little Italian seasoning. I don’t measure this part with my heart lol.
Step 3
3. Set up three bowls. Flour in the first, eggs whisked with a splash of milk in the second, and breadcrumbs mixed with parmesan in the third.
Step 4
4. Coat each piece of chicken in flour first and shake off the extra. Dip it into the egg mixture, then really press it into the breadcrumbs so every little spot is coated.
Step 5
5. Add enough oil to a large skillet to generously cover the bottom and heat it over medium to medium-high heat.
Step 6
6. Once the oil is hot, fry the chicken in batches. Don’t overcrowd the pan! Cook for about 3–4 minutes per side, depending on how thin you made them, until they’re crispy and golden brown.
Step 7
7. Transfer to a wire rack or paper towel-lined plate and sprinkle with a tiny bit of salt while they’re still hot.
Step 8
8. Let them sit for a couple minutes and that’s it! Crispy little chicken cutlet perfection 😘
