Greek Pearl Couscous with Feta

Ingredients
4 servings
1 Tbspbutter
1 cuppearl couscous
1 ½ cupschicken broth
1 tsplemon zest
2 Tbspfresh lemon juice
1 Tbspolive oil
1garlic clove
small, finely minced
⅓ cupfresh parsley
chopped
2 Tbspfresh mint
chopped
½ cupcrumbled feta
¼ cupred onion
finely diced, or sliced green onion
½ tspkosher salt
adjusted depending on how salty your broth/feta are
black pepper
¼ cuppine nuts
Optional, toasted, or sliced almonds
Instructions
Step 1
Melt the butter in a saucepan and add the dry pearl couscous. Toast over medium heat for 2–3 minutes, stirring, until some pearls are lightly golden.
Step 2
Add 1½ cups chicken broth and bring to a boil.
Step 3
Reduce to a gentle simmer, cover, and cook for about 8–10 minutes, or according to the package, until tender and the liquid is absorbed.
Step 4
Remove from heat, fluff/stir, and let it cool for 5–10 minutes.
Step 5
Combine the olive oil, lemon zest, lemon juice, garlic, parsley, onion, and mint (if using) in a small bowl.
Step 6
Pour the sauce over the pearl couscous and mix together. Add salt and pepper as desired.
Step 7
Fold in the crumbled feta gently and toasted pine nuts last, if using.
