Instructions

1. Make the thickener.

Mix the cornstarch and cold water in a small bowl until completely smooth.

Heat the garlic-infused olive oil in a large skillet or wok over medium-high heat. Add the carrots and green beans. Cook for 3–4 minutes.

Add the green bell pepper and cook another 2 minutes.

4. Add the ginger and water chestnuts.

Stir in the ginger and water chestnuts. Cook for 1 minute.

5. Add the bean sprouts.

Stir in the bean sprouts and cook for about 1 minute. Don't overcook them—you want them to stay slightly crunchy.

6. Make the white sauce.

Add the broth, soy sauce, oyster sauce, sesame oil, and black pepper. Bring to a gentle simmer.

7. Thicken.

Stir the cornstarch mixture again, then slowly pour it into the skillet while stirring constantly. Cook for 1–2 minutes, until the sauce is glossy and lightly thickened.
