I enjoyed the tofu being cooked a little longer for color and to dry it more. I also enjoyed extra pineapple being grilled. Just a starting point go wild

Instructions

Cook the rice

Step 1
Rinse: Rinse 1/2 cup dry white rice in a fine-mesh strainer under cool water until the water runs mostly clear.
Step 2
Boil: In a small saucepan, combine the rinsed rice, 1 cup water (or broth), and 1/4 tsp salt. Bring to a rolling boil over high heat.
Step 3
Simmer: Cover tightly with a lid, turn the heat down to low, and let it simmer for 12–15 minutes without lifting the lid.
Step 4
Rest & Fluff: Remove the pot from heat (keep covered) and let it steam for 5 minutes. Remove lid and fluff gently with a fork.
Step 5
Sauté Tofu & Veggies: Heat olive oil in a skillet over medium heat. Add the crumbled tofu and 7 oz fajita mix. Sauté for 5–6 minutes until the veggies soften.
Step 6
Add Pineapple & Seasoning: Add the pineapple chunks, nutritional yeast, and soy sauce. Toss for 2 minutes to warm the pineapple through.
Step 7
Simmer to Soften: Pour in the 1/3 cup No-Beef broth and 2–3 tbsp pineapple juice. Cover with a lid, lower heat to medium-low, and simmer for 4–5 minutes until the tofu is tender and juicy.
Step 8
Finish: Turn off heat and stir in the lemon juice.
