Instructions

Step 1
Heat the oil in a pan. Add the finely chopped onion, green chillies and curry leaves. Sauté until the onion softens slightly. Add a little turmeric and salt and mix. Add the finely chopped tomatoes and cook until they soften and release their juices. Add the sev and gently mix everything together. Cover the pan and leave it on low heat for 2–3 minutes. The moisture from the tomatoes will soften the sev—there's no need to add much extra water. Turn off the heat and sprinkle fresh coriander on top. Serve immediately with roti, chapati or paratha.
