Lolo's Easy Vegetarian Chickpea Tikka Masala

Instructions

Step 1
Prep the ingredients: finely chop the onion, mince the garlic, grate the ginger, and drain and rinse the chickpeas.
Step 2
Soften the onion: heat 1 tbsp oil in a large frying pan or saucepan. Add the onion and cook for 5 minutes, stirring until soft (not brown).
Step 3
Add garlic, ginger and spices: add the garlic and ginger and cook for 1 minute. Stir in garam masala, cumin, coriander, paprika and chilli powder (if using). Cook for 1 minute until fragrant.
Step 4
Add tomatoes: add the chopped tomatoes and tomato purée. Stir well and bring to a simmer.
Step 5
Add chickpeas: add the drained chickpeas. Stir and simmer for 10–15 minutes, stirring occasionally, until the sauce thickens.
Step 6
Add the milk: stir in the coconut milk (or dairy cream). Simmer for another 5 minutes. Taste and add a little sugar, salt and pepper if needed.
Step 7
Finish: sprinkle with fresh coriander (optional). Turn off the heat and let it sit for a couple of minutes.
Step 8
Serve and enjoy: serve with boiled rice, naan bread or chapati. Add extra coriander if you like. Enjoy!
