Creamy Paprika Turkey
Tender turkey strips stir-fried with paprika, onions, peas, and caraway, then tossed with tagliatelle in a creamy Dijon-dill sauce. A quick, warming weeknight meal.

Ingredients

4 tablespoonsbutter

1 teaspoonpaprika
1 cupwhipping cream
1 tablespoondijon-style mustard
2 tablespoonsfresh dill

1.5 lbsturkey cutlets
cut crosswise into 1-inch strips
6 tablespoonsseasoned all-purpose flour
2 tablespoonsvegetable oil
0.5 lbtagliatelle noodles
or egg
10 ozfresh peas
or frozen
2 teaspoonscaraway seeds
Fresh dill sprigs
to garnish
Instructions
Step 1
Heat wok until hot. Add 1 tablespoon of the butter and swirl to coat wok. Add onion and stir-fry 7 or 8 minutes. Add paprika and cook 1 minute. Add cream and bring to a simmer; cook 1 or 2 minutes or until slightly thickened. Add mustard and dill and season with salt and pepper. Pour into a small bowl; keep warm. Wipe wok clean.
Step 2
Dredge turkey strips in seasoned flour. Heat a wok until hot. Add vegetable oil and 1 tablespoon butter and swirl to coat wok. Add turkey strips, working in batches, and stir-fry 2 or 3 minutes. Remove to a plate and keep warm.
Step 3
Cook tagliatelle according to package directions; drain well. Heat a wok until hot. Add remaining butter, peas and caraway seeds. Stir-fry 2 or 3 minutes or until peas are tender. Stir in noodles and season. Stir in a spoon of the reserved sauce and toss to coat noodles. Turn out onto serving plate.
Step 4
Pour remaining sauce and turkey strips into wok, tossing to coat. Cook 1 minute. Spoon turkey strips and sauce over noodles. Garnish with dill sprigs.
