Ingredients

500gnew potatoes
small, or cut into chunks
4eggs
200ggreen beans
trimmed
2little gem lettuces
or 1 large cos lettuce
3tomatoes
ripe, chopped into wedges
1 x 160gtin tuna in olive oil
drained
100gblack olives
Kalamata
2anchovy fillets
optional, chopped
3 Tbspolive oil
1 Tbspred wine vinegar
or lemon juice
1 tspdijon mustard
salt
to taste
black pepper
Instructions
Step 1
Cook the potatoes: Place the potatoes in a pan of salted water. Bring to the boil and cook for 12–15 minutes, until just tender. Drain and allow to cool, then cut into halves or quarters if large.
Step 2
Cook the eggs: Place the eggs in a pan of boiling water and cook for 7–8 minutes (slightly soft or hard, your choice). Drain, run under cold water, peel and cut into halves or quarters.
Step 3
Cook the green beans: Add the green beans to boiling water and cook for 3–4 minutes, until tender but still crisp. Drain and refresh under cold water.
Step 4
Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and a pinch of salt and pepper.
Step 5
Prepare the salad: Arrange the lettuce on a large serving plate. Add the potatoes, tomatoes, green beans, olives and anchovies (if using).
Step 6
Add the tuna and eggs: Flake the tuna over the salad and top with the eggs. Drizzle with the dressing and season with black pepper. Serve immediately.
