Ingredients
6 servings
2 lbbeef chuck
cut into 1 1/2-inch pieces
1 tspsalt
½ tspblack pepper
¼ cupall-purpose flour
2 Tbspvegetable oil
1yellow onion
chopped
3garlic cloves
minced
2 Tbsptomato paste
4 cupsbeef broth
1 Tbspworcestershire sauce
1 tspdried thyme
½ tspdried rosemary
1bay leaf
1 lbYukon Gold potatoes
quartered
4carrots
cut into thick pieces
Instructions
Step 1
Season beef; toss with flour. Brown in oil in two batches.
Step 2
Cook onion 4–5 minutes. Add garlic and tomato paste for 1 minute.
Step 3
Stir in broth, scraping the pot. Return beef.
Step 4
Add Worcestershire, thyme, rosemary and bay leaf.
Step 5
Cover and gently simmer 1 1/2 hours.
Step 6
Add potatoes and carrots. Simmer uncovered 35–45 minutes.
Step 7
Remove bay leaf and adjust seasoning.
