Instructions

Step 1
Heat 1 tbsp olive oil in a large pot and season beef and cook in batches over high until just browned, remove and set aside.

Add onion, cook for 3 mins over low heat until starting to soften, mix in garlic and cook for 1 min.

Mix in pancetta, cook for 2-3 mins over high heat, add celery and carrots, cook for 3-5 mins.

Add flour, mix through, pour in stock, Guinness, tomato paste, season well and bring to the boil.
Step 5
Add bayleaf and mix beef back in.
Step 6
Cover with lid and transfer to pre-heated oven to 170 degrees and cook for 2.5 hours.

Remove lid and cook for a further 30 mins.
