Instructions
1. Dry roast the oats: Heat a pan on medium-low flame and add the oats. Roast them for 3 to 4 minutes until crisp, stirring continuously so they do not burn. Transfer them to a plate and set aside.
2. Prepare the tempering: In the same pan, heat oil or ghee. Add mustard seeds and let them splutter. Add cumin seeds, chana dal, urad dal, and hing. Sauté until the dals turn light golden.
3. Sauté aromatics and veggies: Add the chopped ginger, green chilies, curry leaves, and onions. Sauté until the onions turn translucent. Add the mixed vegetables (carrots, beans, peas) and turmeric powder with a little salt. Sauté for 2 to 3 minutes.
4. Cook the vegetables: Pour in water, cover the pan, and cook on medium heat until the vegetables become soft.
5. Add the oats: Reduce the flame to low. Add the dry-roasted oats and mix well with the cooked vegetables.
6. Simmer: Sprinkle a little more water gradually if needed, cover with a lid, and let it cook on low heat for 3 to 5 minutes until the oats absorb the moisture and become soft and fluffy, not mushy.
7. Garnish and serve: Turn off the heat. Squeeze fresh lemon juice and garnish with chopped coriander leaves before serving.
