Instructions
Step 1
1. Make the Wrappers
• Sift flour into a large bowl.
• Dissolve salt in the boiling water and add it to the flour.
• Mix together, adding extra flour or water if required to form a firm dough.
• Transfer the dough to the work surface and knead for 10 minutes.
• Wrap with plastic wrap and cover with a damp tea towel to prevent it from drying out.
2. Make the Prawn Filling
• Combine all filling ingredients, adding some salt and pepper.
• Mix together until the mixture reaches a pasty texture.
3. Assemble the Gyoza
• Roll out \(\frac{1}{3}\) of the pastry at a time until it is really thin.
• Cut into rounds using a large cookie cutter.
• Fill each round with the prawn mix.
• Stick the edges together using a little water.
• Cover the prepared pastry and assembled gyoza with a damp tea towel, as they dry out very quickly.
• Repeat the process with the rest of the pastry.
4. Cook the Gyoza
• Heat oil in a frypan.
• Fry the gyoza on one side only until the bottoms are golden brown.
• Add water and reduce the heat to medium.
• Cover and allow the gyoza to steam.
• Serve hot with the soy dipping sauce.
