CUPCAKE:
3/4 cup (186g) pumpkin purée
1/4 cup (48g) sweetener
1/3 cup (92g) egg whites
1 tsp vanilla
1 tsp cinnamon
1 tsp pumpkin spice
1/4 cup (30g) oat flour
1 scoop vanilla protein powder
1 tsp baking soda
FROSTING:
1/2 cup (113g) 0% greek yogurt
2 tbsp (30g) low fat cream cheese
1/2 scoop vanilla protein powder
1/4 cup (30g) powdered sweetener
1. Preheat oven to 350 F
2. Mix cupcake ingredients and scoop evenly in cupcake liners (make sure to spray liners with cooking spray)
3. Mix frosting ingredients and pipe evenly into cupcake centers. Add toppings if you want like chocolate chips or pumpkin seeds.
4. Bake for about 22-23 min or until toothpick comes out clean.
5. Enjoy!
