Ingredients
8 servings
2 x 14.5 ozcans White beans
1 x 15 ozcan black beans
1 Tbspavocado oil
1.5jalapeño peppers
medium, seeded and minced
2poblano peppers
medium, seeded and chopped
1onion
large, chopped
4garlic cloves
minced
kosher salt
to taste
Black pepper
freshly ground, to taste
2 Tbspground cumin
1 Tbspground coriander
2 tspancho chili powder
4 cupslow sodium chicken broth
2limes
juiced
1rotisserie chicken
skin removed and meat shredded
¼ cupcilantro leaves
chopped for garnish
sour cream
for topping
lime wedges
for serving
Tortilla chips
or strips for topping
Instructions
Step 1
Drain and rinse white and black beans. In medium bowl, mash half of the white beans with potato mashed until chunky. Set aside.
Step 2
Add avocado oil to a large Dutch oven or stock pot and heat over medium heat. Add peppers, onions, and garlic. Sauté until soft and fragrant, about 5 minutes.
Step 3
Season vegetables with salt and pepper to taste. Add cumin, coriander, and chili powder. Saute for 1 minute to toast spices.
Step 4
Stir in chicken stock and lime juice and bring to simmer. Add beans and mashed beans, continue to simmer for 20 minutes.
Step 5
Taste for seasoning and adjust if needed. Stir in shredded rotisserie chicken and cilantro. Simmer until heated through, about 5 minutes. Serve in bowls topped with a dollop of sour scream, tortilla strips, and lime wedges.
