Instructions
Step 1
-Dice the aubergine, place it on parchment paper, add olive oil, salt and pepper and cook in the oven/air fryer for about fifteen minutes
Step 2
-Start cooking your preferred pasta (I like to use spaghetti)
Step 3
-In the meantime, chop the onion and garlic finely (as small as you can), and fry them in olive oil, in a large skillet.
Step 4
(The key is to cook them on low heat for as long as possible)
Step 5
-Once the garlic is golden and the onion fragrant, add the tomato. Stir for a few minutes, until the tomato gets soft.
Step 6
- Add the tomato paste and mix thoroughly for 2 minutes or less.
Step 7
-Add 1/2 a cup of water in the mixture and stir
Step 8
-Once the aubergine is ready, toss it in the pot.
Step 9
(If you don’t like aubergine, you can use capers, (that you add before the water))
Step 10
-Once cooked, add your pasta to the sauce, and enjoy!
