Instructions
Step 1
1 Prep the fish: Pat the mahi mahi dry really well. This is what keeps the coating light and crisp. Cut into taco-sized strips.
Step 2
2 Season and coat: In a shallow bowl, combine potato starch, fish fry seasoning and salt. Toss the fish in the mixture, pressing lightly so the coating adheres evenly on all sides.
Step 3
3 Heat the oil: Pour about 1/4 inch of neutral oil into a large skillet and heat over medium-high until shimmering. If you drop in a little starch and it sizzles immediately, you’re there.
Step 4
4 Fry the fish: Working in batches, add the fish without crowding the pan. Cook for 2 to 3 minutes per side, until golden and crisp. Adjust heat as needed to keep things sizzling but not scorching.
Step 5
5 Drain and season: Transfer to a paper towel-lined plate and lightly salt while hot as needed.
Step 6
6 Warm the tortillas: Char directly over a flame or heat in a dry skillet until soft and lightly blistered.
Step 7
7 Assemble: Layer crispy fish into tortillas, then top with slaw, avocado and a drizzle of crema . Finish with a squeeze of lime, and hot sauce or cilantro if you like.
