Instructions
Step 1
Wash and cut potatoes into baby potato size. Do not peel
Step 2
Boil potatoes with 1 teaspoon salt until fork tender
Step 3
On a pan, heat oil and fry mustard seeds and curry leaves
Step 4
Allow mustard seeds to crackle
Step 5
Then add garlic ginger paste, sauté for 20 seconds then add onions
Step 6
Fry onions on medium heat for around 5 minutes until golden brown, and then add spices
Step 7
Cook spices on low heat for around one minute, add a splash of water to help cook the spices
Step 8
Add green chillies then add the potatoes
Step 9
Cook on medium heat for 5 minutes, constantly tossing the potatoes
Step 10
Cook potatoes until they're golden
Step 11
Garnish with fresh coriander and serve
