1 tspmustard seeds

1 tspcumin powder
1 tspRed chilli powder

½ tsphaldi
1 tspgaram masala
salt
to taste

2 Tbspcooking oil
Instructions
Step 1

Chop all the vegetables lengthwise, around the same size so they all cook evenly.
Step 2

In a non-stick pan, take 2 tbsp cooking oil. Add cumin and mustard seeds and hing.
Step 3

When the mustard seeds begin cackling, in a low flame, add onions, green chillies, and (optional) curry leaves.
Step 4

Once the onions are slightly cooked, add potatoes and cook for 2 minutes on a low flame.
Step 5

After 2 mins, add the rest of the vegetables and fry well.
Step 6

Add cumin powder, dhaniya powder, haldi, red chilli powder, garam masala, salt, and (optional) sugar.
Step 7

Mix well. Close with a lid, and keep stirring every few minutes on a low flame. The vegetables should take about 10 mins to be fully cooked.
Step 8

Serve hot with chapatis or rice and dal on a lazy weekday night.
