Jjajangmyeon (Black Bean Noodles)
Jjajangmyeon (Black Bean Noodles) is a popular Korean-Chinese noodle dish made with black bean paste, meat and vegetables. If you’re a fan of Korean dramas, you’ve probably seen this dish as it’s the most popular delivery food!
As long as you have the black bean paste, it’s pretty simple to make at home.
Pork is traditionally added but you can substitute with your favorite meat or omit for vegetarian.
For the vegetables, you can add cabbage, zucchini or potato. Feel free to add vegetables based on preference.

Ingredients
3 servings
1 tablespooncooking oil
0.5 poundpork belly
shoulder or butt, cubed
1 tablespoonrice wine
or mirin, optional
black pepper
2garlic cloves
minced or grated
1 teaspoonginger
minced or grated
⅓ cupblack bean paste
1 tablespoonsugar
0.5onion
diced
1 cupscabbage
sliced
0.5zucchini
diced, optional
1 cupchicken broth
or water
fresh udon noodles
jjajang, or any dry noodles, cooked
1 tablespooncornstarch
mixed with 1/4 cup water
cucumber
optional garnish, sliced into matchsticks
Instructions
Step 1
Marinate the pork with rice wine or mirin while you prep the ingredients. (The rice wine helps tenderize the meat).
Step 2
Heat oil in a pan. Stir fry the pork with black pepper for a few minutes. Add garlic and ginger and stir fry for about 30 seconds.
Step 3
Move ingredients to the side of the pan and add the black bean paste and sugar and cook for about a minute. Add the remaining vegetables and stir fry for about 2 minutes.
Step 4
Add broth and bring to a boil. Reduce heat and simmer for about 5 minutes.
Step 5
Meanwhile, cook noodles according to package directions.
Step 6
Stir in the cornstarch/water mixture to the pan and cook for about 5 minute or until the sauce has thickened. Taste and add sugar, salt, or pepper, as needed.
Step 7
Drain the noodles, rinse in cold water and transfer to serving bowls. Top with sauce, and add optional cucumber. Mix together and enjoy!
