Instructions
Step 1
1. Dice onion and slice mushrooms
2. In a food processor, combine tofu, 1 TSP salt and vegetable stock
3. Blend until smooth
4. In a large frying pan, heat olive oil with garlic and onion and fry until onion is translucent
5. Add mushrooms and cook until soft
6. Add tofu mixture and salt and pepper and let simmer until heated through and until sauce thickens
7. Meanwhile, cook pasta according to instructions
8. Once pasta is cooked, add to sauce and mix to combine
9. Add parmesan and stir though 10. Serve
